There are amazingly detailed maps of the Mont Blanc massif, as there are of all the French Alps. Buy them in Chamonix or in any big city in France.

There are many guide books for the area. Two we can recommend are: Mont Blanc et Aiguilles Rouges a Ski by Anselme Baud which has 156 route descriptions and many more variations, along with a list of the refuges in the area and great colour photos of most of the routes, and Ski de Randonnée Haute Savoie – Mont Blanc by Francois Labande which has 170 routes with simple maps but no photos. Both books are only available in French. You can get them on-line or in Chamonix or any good book store in Grenoble or Lyon. Finally Les plus beaux raids à skis (Broché) by Mario Colonel, Jean-René Minelli and Frédéric Chevaillot has a few of the best tours around Mont Blanc in it.
